O trabalho verificou os tipos de cacau existentes, as principais regiões produtoras, os métodos de fabricação do chocolate e as tendências de consumo na atualidade. O presente trabalho descreveu os processos de produção, desde a colheita do fruto do cacau, a identificação dos tipos de sementes, os processos de fermentação e torrefação de cacau, até a obtenção do produto final. Dentre os principais elementos que serviram como base teórica destaca-se: a história do cacau na América e na Europa; o conceito de cacau e a planta originária; a fabricação do chocolate; e dados dos principais fornecedores de cacau fino do mundo. Em sua dimensão metodológica, o presente trabalho utilizouse de pesquisa bibliográfica. The work verified the existing types of cocoa, the main producing regions, the methods of manufacture of the chocolate and the trends of consumption in the present time. The present work described the production processes, since the harvest of the fruit of the cocoa, the identification of the types of seeds, the processes of fermentation and toasting of cocoa until the attainment of the end item. Amongst the main elements that had served as theoretical base is distinguished: the history of the cocoa in America and the Europe; the concept of cocoa and the originary plant; the manufacture of the chocolate; e given of the main suppliers of fine cocoa of the world. In its methodological dimension, the present work was used of bibliographical research.
