Resumo: In a context of standardization of eating habits and under a hegemonic agri-food system, peasant social reproduction and the patrimonialization of local practices and knowledge associated with food are forms of resistance. In this essay, our objective is to discuss the role of peasant communities in safeguarding intangible food cultural heritage. To this end, we discuss the theoretical framework of peasantry, pointing to its heterogeneity in Brazil and highlighting the perspective of resistance; we present the emerging debate about intangible cultural heritage associated with food; and we propose a dialogue between the discussions on peasantry and food heritage. When analyzing the peasantry from the perspective of resistance (historical, everyday, permanence in the countryside and social and cultural reproduction of their ways of life), we argue that the different intangible cultural heritages are components of their daily lives and are reproduced in it.

En este ensayo, nuestro objetivo es discutir el papel de las comunidades campesinas en la salvaguarda del patrimonio cultural inmaterial alimentario. Para ello, discutimos el marco teórico del campesinado, señalando su heterogeneidad en Brasil y destacando la perspectiva de la resistencia; presentamos el debate emergente sobre el patrimonio cultural inmaterial asociado a la alimentación; y proponemos un diálogo entre las discusiones sobre el campesinado y el patrimonio alimentario. Al analizar al campesinado desde la perspectiva de la resistencia (histórica, cotidiana, permanencia en el campo y reproducción social y cultural de sus modos de vida), argumentamos que los diferentes patrimonios culturales inmateriales son componentes de su cotidianidad y se reproducen en ella.Em um contexto de uniformização dos hábitos alimentares e sob um sistema agroalimentar hegemônico, a reprodução social camponesa e a patrimonialização de práticas e saberes locais associados à alimentação são formas de resistência. Neste ensaio, nosso objetivo é discutir o papel das comunidades camponesas na salvaguarda de patrimônios culturais imateriais alimentares. Para tal, discutimos o referencial teórico de campesinato, apontando para a sua heterogeneidade no Brasil e destacando a perspectiva da resistência; apresentamos o emergente debate acerca dos patrimônios culturais imateriais associados à alimentação; e propomos um diálogo entre as discussões sobre campesinato e patrimônios alimentares.
