Resumo: Beer is one of the oldest drinks consumed by human. Over the years this one has been modified, drafted by laws and taking new forms. Initially composed by water, malt, hop and yeast, the drink nowadays presents itself in different types, using the same base to make new variatons. Due to the large consumption, several ventures that produces the drink have emerged, which these are divided into two groups: the large industries and the microbreweries. The large industries control the market with low cost beers, while the microbreweries produce craft beers, special in flavor and experience for the customer. On the past few years a significant increase in demand for craft beers can be seen, and in this way changing the projection of the beer market. This work had the objetive to project a microbrewery with a monthly production of 100 m³ of Amber Ale beer, with the possibility of expansion. The project was presented financially viable with payback in 24,6 months.

Ao longo da história a mesma foi se modificando, sendo regida por leis e assumindo novas formas. Inicialmente composta por água, malte, lúpulo e levedura, a bebida hoje se apresenta em diferentes tipos, utilizando-se da mesma base para compor novas variações. Devido ao grande consumo, surgiram diversos empreendimentos que produzem a bebida, os quais são divididos em dois grandes grupos: as grandes indústrias e as microcervejarias. As grandes indústrias dominam o mercado com produtos de baixo valor, enquanto as microcervejarias produzem cervejas especiais, diferenciadas em sabor e experiência para o consumidor. Nos últimos anos pode ser visto um aumento significativo na procura por cervejas artesanais, alterando a projeção do mercado da cerveja. O presente trabalho teve como objetivo projetar uma microcervejaria com produção de 100 m³ mensais de cerveja do tipo Amber Ale, e possibilidade de expansão.
