Evaluation of Quality Management and its tools: applicability in the animal food industry

Resumo: | This research aims to evaluate the quality management and its tools in order to understand its applicability in food industries of animal origin. The methodology used for the development of this work was based on a qualitative approach with bibliographic survey in databases of the Ministry of Agriculture, Cattle and Supplying, Scielo, Pubmed and Google Scholar through agreement between terms. Among the tools available for the food industries of animal origin, the self-control programs established by Circular n. 175, of May 16, 2005 and Internal Standard n. 01, of March 8, 2017, both from the Ministry of Agriculture, Cattle and Supplying (MAPA), are procedures that meet the safety and food security conditions required by legislation, as they are based on systematic continuous inspections of all factors that may interfere in some way in the quality of products exposed to the population's consumption. In this way, the application and understanding of quality management and tools such as self-control programs align up with the results presented, since self-control programs ensure the condition of food security through its implementation, which is defined and controlled by quality management system, which ensures that the inspected elements will be identified and controlled in the process, with this, added to their beneficial use, since it converges with the recommended legislation, brings validation, safety and product quality, and consequently, achieves credibility when competing with foreign markets and support with the final consumer. |

La metodologia utilizada para el desarrollo de este trabajo se basó en un enfoque cualitativo com levantamento bibliográfico en bases de datos del Ministerio de Agricultura, Ganadéria y Abastecimiento, Scielo, PubMed y Google Scholar mediante convenio entre términos. Entre las herramientas disponibles para las industrias alimentarias de origen animal, los programas de autocontrol establecidos por la Circular n. 175, del 16 de mayo de 2005 y la Norma Interna n. 01, del 8 de marzo de 2017, ambas del Ministerio de Agricultura, Ganadería y Abastecimiento (MAPA), son procedimientos que cumplen con las condiciones de inocuidad y seguridad alimentaria exigidas por la legislación, ya que se basan en inspecciones continuas y sistemáticas de todos los factores que puedan interferir de alguna manera en la calidad de los productos expuestos al consumo de la población. De esta forma, la aplicación y comprensión de la gestión de la calidad y herramientas como los programas de autocontrol están se alinean con los resultados presentados, ya que los programas de autocontrol aseguran la condición de seguridad alimentaria mediante de su implementación, la cual es definida y controlada por sistema de gestión de calidad, que asegura los elementos inspeccionados serán identificados y controlados en el proceso, sumando así a su uso beneficioso, ya que converge con la legislación recomendada, aporta validación, seguridad y calidad del producto, y en consecuencia, logra credibilidad a la hora de competir con los mercados exteriores y apoyo con el consumidor final.Esta pesquisa tem como objetivo avaliar a gestão da qualidade e suas ferramentas de forma a compreender sua aplicabilidade em indústrias alimentícias de origem animal. A metodologia utilizada para o desenvolvimento deste trabalho foi fundamentada na abordagem qualitativa com levantamento bibliográfico em bases de dados do Ministério da Agricultura, Pecuária e Abastecimento, Scielo, Pubmed e Google Scholar por meio de concordância entre termos. Dentre as ferramentas disponíveis para as indústrias alimentícias de origem animal, os programas de autocontrole estabelecidos pela Circular n. 175, de 16 de maio de 2005 e a Norma Interna n. 01, de 08 de março de 2017, ambas do Ministério da Agricultura Pecuária e Abastecimento (MAPA), são procedimentos que atendem as condições de inocuidade e segurança alimentar exigidas pelas legislações, pois se baseiam em sistemáticas inspeções contínuas de todos os fatores que podem interferir de alguma forma na qualidade dos produtos expostos ao consumo da população.
