Resumo: The objective of this work was to evaluate the microbiological quality and physical and chemical characteristics of frozen passion fruit pulp marketed in two supermarkets in the city of Machado/MG, in order to verify the adequacy of the product to the standards established by current legislation. The following analyzes were performed: coliforms at 35oC, Salmonella spp. research, mold and yeast count, pH, titratable acidity, soluble solids, total solids, total soluble sugars and color (L* value, hue angle and chroma). All passion fruit pulps analyzed presented values ​​below 0.3 NMP.g-1 for coliforms at 35°C, absence of Salmonella spp. in 25 g and yeast and mold count less than 5x10³ CFU.g-1, meeting ANVISA and MAPA microbiological standards for fruit pulp. Frozen passion fruit pulp marketed in supermarkets showed pH, titratable acidity, soluble solids and total solids within the identity and quality standards established by the current legislation for passion fruit pulp. The total soluble sugar content of frozen passion fruit pulp sold in supermarkets A and B were 4.69% and 3.79%, respectively. It is concluded that the frozen passion fruit pulp marketed in Machado/MG, are within the standards established by current legislation, indicating that the satisfactory hygienic-sanitary conditions of the product will not compromise the health and welfare of consumers and supermarkets showed good storage and marketing conditions.

Se realizaron los siguientes análisis: coliformes a 35°C, Salmonella spp. Research, recuento de mohos y levaduras, pH, acidez titulable, sólidos solubles, sólidos totales, azúcares solubles totales y color (valor L*, ángulo de tono y croma). Todas las pulpas de maracuyá analizadas mostraron valores por debajo de 0.3 NMP.g-1 para coliformes a 35°C, ausencia de Salmonella spp. en 25 gy recuento de mohos y levaduras menores de 5x10³ UFC.g-1, cumpliendo con los estándares microbiológicos de ANVISA y MAPA para pulpa de fruta. Las pulpas de maracuyá congeladas, vendidas en supermercados, mostraron valores de pH, acidez titulable, sólidos solubles y sólidos totales dentro de los estándares de identidad y calidad establecidos por la legislación actual para la pulpa de maracuyá. El contenido total de azúcar soluble de las pulpas de maracuyá congeladas, que se venden en los supermercados A y B, fue de 4,69% y 3,79%, respectivamente. Se concluye que las pulpas de maracuyá congeladas vendidas en Machado/MG están dentro de los estándares establecidos por la legislación vigente, lo que indica que las condiciones higiénico-sanitarias satisfactorias del producto no comprometerán la salud y el bienestar de los consumidores y que los supermercados mostraron buenas condiciones de almacenamiento y comerciales.O objetivo deste trabalho foi avaliar a qualidade microbiológica e as características físicas e químicas de polpas de maracujá congeladas comercializadas em dois supermercados da cidade de Machado/MG, com intuito de verificar a adequação do produto aos padrões estabelecidos pelas legislações vigentes. As seguintes análises foram realizadas: coliformes a 35oC, pesquisa de Salmonella spp., contagem de bolores e leveduras, pH, acidez titulável, sólidos solúveis, sólidos totais, açúcares solúveis totais e cor (valor L*, ângulo hue e croma). Todas as polpas de maracujá analisadas apresentaram valores menores que 0,3 NMP.g-1 para coliformes a 35°C, ausência de Salmonella spp. em 25 g e contagem de bolores e leveduras menores que 5x10³ UFC.g-1, estando em conformidade aos padrões microbiológicos da ANVISA e do MAPA para polpa de frutas. As polpas de maracujá congeladas, comercializadas nos supermercados, apresentaram valores de pH, acidez titulável, sólidos solúveis e sólidos totais dentro dos padrões de identidade e qualidade estabelecidos pela legislação vigente para polpa de maracujá. Os teores de açúcares solúveis totais das polpas de maracujá congeladas comercializadas nos supermercados A e B, foram de 4,69% e 3,79%, respectivamente.
