Linear optimization applied in the production of wine in the San Francisco Valley

Resumo: The quality of the fine wine produced is related to the grape used and also to the technologies used in the process. The oenological inputs that are used in the elaboration guarantee the wine a differential in front of consumers. In this context, the objective of the present work was to carry out a survey of the costs of production inputs for the elaboration of fine, red and white wines, and the use of linear optimization to maximize production profit. Data were collected on the amounts of inputs used in three fine wines, two red Cabernet Sauvignon, Malbec and one white Muscat Petit Grain, produced in the Lower Middle of the São Francisco Valley. For this, a Linear Optimization model was elaborated with three scenarios, in the first one the real data of the elaboration of the three wines was used, in the second there was the restriction of bottles and corks and in the third the restriction of a single input. The results of the mathematical programming made it possible to predict the required amount of liters of each type of wine to be made to maximize profit according to each scenario presented.

Los insumos enológicos que se utilizan en la elaboración garantizan al vino un diferencial frente a los consumidores. Em este contexto, el objetivo del presente trabajo fue realizar um levantamiento de los costos de los insumos de producción para la elaboración de vinos finos, tintos y blancos, y el uso de la optimización lineal para maximizar la ganancia de producción. Se recogieron datos sobre las cantidades de insumos utilizados em tres vinos finos, dos tintos Cabernet Sauvignon, Malbec y um blanco Moscatel de Grano Pequeño, producidos em el Medio Bajo del Valle del São Francisco. Para ello, se elaboró ​​um modelo de Optimización Lineal com tres escenarios, em el primero se utilizaron los datos reales de la elaboración de los tres vinos, em el segundo la restricción de botellas y corchos y em el tercero la restricción de um solo vino aporte. Los resultados de la programación matemática permiten predecir la cantidad de litros necesarios de todo tipo de vino a producir para maximizar la rentabilidad según cada escenario presentado.A qualidade do vinho fino produzido, está relacionada a uva utilizada e também as tecnologias empregadas no processo. Os insumos enológicos que são usados na elaboração garantem ao vinho um diferencial frente aos consumidores. Nesse contexto, o objetivo do presente trabalho foi realizar o levantamento dos custos de insumos de produção da elaboração de vinhos finos, tintos e brancos, e uso de otimização linear para maximizar o lucro de produção. Foram coletados dados das quantidades de insumos utilizados em três vinhos finos, dois tintos Cabernet Sauvignon, Malbec e um branco Muscat Petit Grain, elaborados no Submédio do Vale do São Francisco. Para isto, foi elaborado um modelo de Otimização Linear com três cenários, no primeiro foi utilizado os dados reais da elaboração dos três vinhos, no segundo houve a restrição de garrafas e rolhas e no terceiro a restrição de um único insumo.
