Importance of active edible coatings as a strategy to protect oilseeds against lipid oxidation processes found in the literature

Resumo: The Brazil nut (Bertholletia Excelsa) is rich in monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA) such as oleic acid, linoleic acid and linolenic acid. The high content of these acids makes it a perishable food, and thus susceptible to lipid oxidation reactions that modify the physical, chemical, and sensory properties of the product, thus reducing its shelf life and added value. One of the solutions found in the literature is the application of active packaging, such as films and coatings that are made from biopolymers such as proteins, polysaccharides or lipids, which have a matrix of easy interaction with additives that can add new functions in the production of antioxidant, antimicrobial, low water vapor permeability packaging, and among other activities. The present literature review has the objective of searching for articles and presenting the results of the application of films and coating on oilseeds, besides discussing a little about what lipidic oxidation is, what favors the reaction and how to minimize it. As the result of the research, it was conclude that the application of films and coatings with antioxidant compounds helps to protect against lipid oxidation in oilseeds, contributing to the shelf life of the product, while maintaining the sensory characteristics that characterize them as foods of high nutritional value.

El alto contenido de estos ácidos lo convierte en un alimento un tanto semejante y, así, susceptible de sufrir reacciones de oxidación lipídica que modifican las propiedades físicas, químicas y sensoriales del producto, reduciendo su vida útil y su valor añadido. Una de las soluciones encontradas en la literatura es la aplicación de envases activos, como películas y recubrimientos que están hechos de biopolímeros como proteínas, polisacáridos o lípidos, que tienen una matriz de fácil interacción con aditivos que pueden añadir nuevas funciones en la producción de envases antioxidantes, antimicrobianos y de baja permeabilidad al vapor de agua, y entre otras actividades. La presente revisión bibliográfica tiene como objetivo buscar artículos y presentar los resultados de la aplicación de películas y recubrimientos en semillas oleaginosas, además de discutir un poco sobre lo que sería la oxidación de los lípidos, lo que favorece la reacción y cómo minimizarlos. Como resultado de la búsqueda, se puede concluir que la aplicación de películas y recubrimientos con compuestos antioxidantes ayuda a proteger las semillas oleaginosas de la oxidación de los lípidos, contribuyendo a la vida útil del producto, manteniendo las características sensoriales que las caracterizan como alimentos de alto valor nutricional.A castanha-do-Brasil (Bertholletia Excelsa) é rica em ácidos graxos monoinsaturado (MUFA) e poli-insaturado (PUFA) como o ácido oleico, ácido linoleico e ácido linolênico. Por apresentar alto conteúdo desses ácidos torna-o um alimento perecível, e assim susceptível a sofrer reações de oxidações lipídicas que modificam as propriedades físicas, químicas e sensoriais do produto, portanto, diminui o seu tempo de vida de prateleira e o valor agregado. Uma das soluções encontradas na literatura é a aplicação de embalagens ativas, como filmes e revestimentos que são elaborados à base de biopolímeros como proteínas, polissacarídeos ou lipídeos, que possuem uma matriz de fácil interação com aditivos que podem agregar novas funções na produção de embalagens antioxidantes, antimicrobiana, com baixa permeabilidade ao vapor d’água, e entre outras atividades. A presente revisão literária tem como objetivo buscar artigos e apresentar os resultados da aplicação de filmes e revestimento em oleaginosas, além de dissertar um pouco sobre o que seria oxidação lipídica, o que favorece a reação e como minimizá-las.
