Nutricional and antioxidant potencial of unconvencional food plants and their use in food: Review

Resumo: Non-conventional food plants (PANCs) are edible parts of plants that can be easily found in urban and rural environments and that are not usually included in the diet. However, there is little or no use of these vegetables in the daily diet of the population. Therefore, the objective of this work was to demonstrate the great nutritional potential of these plants by establishing aspects related to their nutritional properties, antioxidants and use in food. This study is a bibliographic review. Scientific articles published in the last 5 years on the Scielo, Lilacs, Pubmed and Scienc Direct data platforms were used. The studies showed a great diversity of vegetables with excellent nutritional composition, rich in macronutrients and bioactive compounds that would increase and diversify the diet of the Brazilian population, but which are little or no used due to the lack of knowledge of their nutritional benefits and their employment in food production. As it was seen above, it is suggested that new research can be developed to allow the expansion of the population's knowledge about PANCs.

Sin embargo, hay poco o ningún uso de estos vegetales en la dieta diaria de la población. Por lo tanto, el objetivo de este trabajo fue demostrar el gran potencial nutricional de estas plantas estableciendo aspectos relacionados con sus propiedades nutricionales, antioxidantes y uso en alimentos. Este estudio es una revisión bibliográfica. Se utilizaron artículos científicos publicados en los últimos 5 años sobre las plataformas de datos Scielo, Lilacs, Pubmed y Scienc Direct. Los trabajos mostraron una gran diversidad de vegetales con excelente composición nutricional, ricos en macronutrientes y compuestos bioactivos que aumentarían y diversificarían la dieta de la población brasileña, pero que son poco o casi utilizados debido a la falta de conocimiento de sus beneficios nutricionales y sus empleo en la producción de alimentos. En vista de lo anterior, se sugiere que se desarrollen nuevas investigaciones para permitir la expansión del conocimiento de la población sobre los PANC.As plantas alimentícias não convencionais (PANCs) são partes comestíveis de plantas que podem ser facilmente encontradas em ambientes urbanos e rurais e que não são incluídas habitualmente na dieta. Contudo, há pouco ou nenhuma utilização desses vegetais na alimentação diária da população. Diante disso, o objetivo desse trabalho visou demonstrar o grande potencial alimentício dessas plantas, estabelecendo aspectos relacionados com suas propriedades nutritivas, antioxidantes e sua utilização na alimentação. O presente estudo trata-se de uma revisão bibliográfica. Foram utilizados artigos científicos publicados nos últimos 5 anos nas plataformas de dados da Scielo, Lilacs, Pubmed e Scienc Direct. Os trabalhos evidenciaram uma grande diversidade de vegetais com excelente composição nutricional, ricas em macronutrientes e compostos bioativos que incrementariam e diversificariam a dieta da população brasileira, mas que são pouco ou quase nada utilizadas em virtude da falta de conhecimento dos seus benefícios nutricionais e do seu emprego na produção de alimentos.
