Development of the prototype of the digital form for Studies in Food, Nutrition, Health and Aging: EANSE FORMS

Resumo: | The objective was to describe the methodological and prototyping process of the digital form for studies on food, nutrition, health and aging: Eanse Forms. This is a quantitative study, with a cross-sectional design and descriptive approach of the development of a process of the prototype of the digital form, Eanse Forms, which aims to collect, store, structure and export data on health and food consumption of the elderly. The form is composed of questions, including a 24-hour recall to evaluate food intake. Its development was structured in six stages. In the last one, a pre-test was conducted on forty-five elderly volunteers in October and November 2019. The form was applied individually, through a guided interview, with the presence of previously trained nutritionists. At the end, aspects such as acceptance of the form, understanding of the questions, interview time, suggestions, and necessary adjustments were evaluated. The results of the pre-test showed that the performance of the form was considered satisfactory and was well accepted by the participants. However, it is worth emphasizing that the wider and more effective use of the form still depends on new rounds of analyses, including evaluations of the structure, the incorporation of suggestions and adjustments identified in the pre-test, and the validation study itself. It is believed that the next steps will allow obtaining a digital form, of free access and able to collect, store, structure and export data on food, nutrition, health and aging. Thus, it is expected that the digital form, Eanse forms, will provide subsidies to develop health promotion actions for the elderly population. |

Se trata de un estudio cuantitativo, com um disseño transversal y enfoque descriptivo del desarrollo del formulario digital Eanse Forms, que tiene como objetivo recopilar, almacenar, estructurar y exportar datos sobre la salud y el consumo de alimentos de las personas mayores. El formulario se compone de preguntas, incluido un recordatorio de 24 horas para evaluar el consumo de alimentos. Su desarrollo se estructuró en seis etapas. En la última, el pre-test se realizó en cuarenta y cinco voluntarios adultos mayores en los meses de octubre y noviembre de 2019. El formulario se aplicó de forma individual, a través de una entrevista guiada, con la presencia de nutricionistas previamente capacitados. Al final se evaluaron aspectos como aceptación del formulario, comprensión de las preguntas, tiempo de entrevista, sugerencias y ajustes necesarios. Los resultados de la prueba previa mostraron que el desempeño del formulario se consideró satisfactorio y fue bien aceptado por los participantes. Sin embargo, vale la pena enfatizar que el uso más amplio y efectivo del formulario aún depende de nuevas rondas de análisis, incluidas evaluaciones de estructura, incluida la incorporación de sugerencias y ajustes identificados en la prueba previa, además del estudio de validación en sí. O desenvolvimento do protótipo foi estruturado em seis etapas. Na última, foi realizado o pré-teste do formulário, em quarenta e cinco idosos, voluntários, nos meses de outubro e novembro de 2019. O formulário foi aplicado individualmente, por meio de entrevistas guiadas, com a presença de nutricionistas, previamente treinadas. O formulário é composto por perguntas, incluindo um Recordatório de 24 horas para avaliação do consumo alimentar. Nesta etapa foram avaliados aspectos como a aceitação e compreensão, o tempo de aplicação e ajustes do formulário. No pré-teste, o desempenho do formulário foi considerado satisfatório e contou com boa aceitação dos participantes. Por fim, cabe enfatizar que a utilização mais ampla e efetiva do formulário ainda depende de novas rodadas de análises, incluindo novas avaliações de estrutura, passando pela incorporação dos ajustes identificados no pré-teste, até pelo próprio estudo de validação.
