Resumo: Beef is one of the main foods consumed and marketed in Brazil, requiring proper quality control. Given this fact, the present study, through microbiological analysis, aimed to identify the presence of Salmonella spp. in ground beef sold in the municipalities of Vale do Guaribas in the state of Piauí. For this, 50 samples of ground beef were collected from public markets and butchers. The results obtained were compared with current legislation and classified as own or improper for consumption. It was found that of the 15 municipalities where collections were made, 93.33% had some sample not in accordance with the standard required by resolution and of the 50 samples, 84% were positive for the bacterium in question, being unfit for consumption. Incompatible hygiene practices were detected in the study and better and more effective enforcement of perishable food commercialization was necessary, overseeing critical control points and thus ensuring the provision of safe food.

Ante este hecho, el presente estudio, a través del análisis microbiológico, tuvo como objetivo identificar la presencia de Salmonella spp. en carne molida vendida en los municipios de Vale do Guaribas en el estado de Piauí. Para esto, se recolectaron 50 muestras de carne molida obtenida de mercados públicos y carnicerías. Los resultados obtenidos se compararon con la legislación vigente y se clasificaron como propios o inadecuados para el consumo. Se encontró que de los 15 municipios donde se hicieron las recolecciones, el 93.33% tenía alguna muestra que no estaba de acuerdo con el estándar requerido por resolución y de las 50 muestras, el 84% era positivo para la bacteria en cuestión, no apto para el consumo. En el estudio se detectaron prácticas de higiene incompatibles y fue necesaria una aplicación mejor y más efectiva de la comercialización de alimentos perecederos, supervisando los puntos críticos de control y garantizando así la provisión de alimentos inocuos.A carne bovina é um dos principais alimentos consumidos e comercializados no Brasil, necessitando de um controle de qualidade adequado. Diante desse fato, o presente estudo, através de análises microbiológicas, teve como objetivo identificar a presença de Salmonella spp. na carne bovina moída comercializada nos municípios do Vale do Guaribas no Estado do Piauí. Para isso foram coletadas 50 amostras de carne bovina moída adquiridas nos mercados e açougues públicos. Os resultados obtidos foram comparados com a legislação vigente e classificados como próprio ou improprio para consumo. Foram verificados que dos 15 municípios onde foram feitas coletas, 93,33% apresentaram alguma amostra não conforme com o padrão exigido pela resolução e dentre as 50 amostras, 84% constaram como positivo para a bactéria em questão, estando impróprias para o consumo.
