Effects of chicken slaughter methods on exsanguination efficiency

Resumo: The objective of this work was to evaluate the effects of chicken slaughter methods with electronarcosis and without stunning (according to the Halal method) and unilateral and bilateral cuts on exsanguination efficiency. A total of 100 female fowls were slaughtered under the Federal Inspection Service and divided into two treatments: with and without stunning, subjected to two different handling protocols: unilateral and bilateral cuts of the carotid arteries and veins in a completely randomized design. Exsanguination efficiency was assessed by means of the percentage of blood drained by body weight of the chickens expelled through unilateral and bilateral cuts of blood vessels. Greater blood loss was observed in slaughtered animals stunned by electronarcosis, and there was no statistical difference between unilateral and bilateral cuts. In conclusion, from the point of view of exsanguination efficiency, the slaughter method with electronarcosis does not impair blood flow, in compliance with the Halal slaughter precepts.

Se sacrificaron 100 hembras bajo el Servicio de Inspección Federal y se dividieron en dos tratamientos: con y sin aturdimiento, sometidas a dos protocolos de manejo diferentes: cortes unilaterales y bilaterales de las arterias y venas carótidas en un diseño completamente aleatorizado. La eficacia del desangrado se evaluó mediante el porcentaje de sangre drenada por peso corporal de los pollos a través de cortes unilaterales y bilaterales de vasos sanguíneos. Se observó una mayor pérdida de sangre en los animales sacrificados aturdidos por electronarcosis y no hubo diferencia estadística entre cortes unilaterales y bilaterales. Se concluye que, desde el punto de vista de la eficacia del desangrado, el método de sacrificio con electronarcosis no altera el flujo sanguíneo, cumpliendo con los preceptos de sacrificio Halal.O objetivo neste trabalho foi avaliar os efeitos dos métodos de abate de frangos com eletronarcose e sem insensibilização (conforme preceito do método Halal) e dos cortes unilateral e bilateral na eficiência da sangria. Foram utilizadas 100 aves, fêmeas, abatidas sob Serviço de Inspeção Federal e divididas em dois tratamentos: com e sem insensibilização, submetidas a dois protocolos de manuseio distintos: cortes unilateral e bilateral das artérias e veias carótidas em delineamento inteiramente casualizado. A eficiência da sangria foi avaliada por meio do percentual de sangue escoado por peso corporal dos frangos expelido por meio de cortes unilateral e bilateral dos vasos sanguíneos. Verificou-se maior perda de sangue nos animais abatidos insensibilizados por eletronarcose e, não houve diferença estatística entre os cortes unilateral e bilateral.
