Analysis of the quality of milk from producers in the North of Rio Grande do Sul State (RS)

Resumo: | Refrigerated raw milk must be obtained in a hygienic manner, following strict protocols so that there is no possibility of alterations in its composition. Brazilian legislation stipulates that milk must be refrigerated at the farm within three hours after milking, at a temperature equal to or lower than 4ºC, and the alizarol stability test must be performed by the transporter before milk collection, obeying physicochemical and microbiological standards before unloading at the dairy industry. The Standardized Plate Count (SPC) analysis of milk aims to verify the hygiene of the milking and property facilities and the standard is 300x10³ CFU/mL which is acceptable, while the somatic cell count (SCC) analysis indicates the presence of mastitis in the dairy herd. This paper describes the results of the evaluation of routine milk collection routine in 30 rural properties for comparison of the temperature indicated on the expansion tank panel and the temperature measured in situ, using a saliva thermometer. Analysis of the stability of alizarol 78% v/v was also carried out, as well as the collection of 3 milk samples for CPP and CCS analysis at an external accredited laboratory. Most (66.6%) of the milk cooler temperature values found corresponded to the correct milk temperature measured (in situ) by a calibrated thermometer. In only three properties was there an inconsistency in the analysis of alizarol stability, resulting in the rejection of the milk collection. The results of the PPC analysis indicated non-compliance in 7 properties (23.3%), while the SCC indicated non-compliance in 21 properties (70.0%), with a high rate of mammary infections among the animals milked in the properties. |

La legislación brasileña estipula que la leche debe ser refrigerada en la granja dentro de las tres horas siguientes al ordeño, a una temperatura igual o inferior a 4ºC, y la prueba de estabilidad del alizarol debe ser realizada por el transportista antes de la recogida de la leche, obedeciendo a las normas fisicoquímicas y microbiológicas antes de la descarga en la industria láctea. El análisis del Recuento Estandarizado de Placas (CPE) de la leche tiene como objetivo verificar la higiene del ordeño y de las instalaciones de la propiedad y el estándar es de 300x10³ UFC/mL que es aceptable, mientras que el análisis del recuento de células somáticas (CSC) indica la presencia de mastitis en el rebaño lechero. Este trabajo describe los resultados de la evaluación de la rutina de recolección de leche en 30 propiedades rurales para la comparación de la temperatura indicada en el panel del tanque de expansión y la temperatura medida in situ, utilizando un termómetro de saliva. También se llevó a cabo el análisis de la estabilidad del alizarol 78% v/v, así como la recogida de 3 muestras de leche para el análisis de CPP y CCS en un laboratorio externo acreditado. La mayoría (66,6%) de los valores de temperatura del refrigerador de leche encontrados correspondían a la temperatura correcta de la leche medida (in situ) por un termómetro calibrado. Sólo en tres propiedades hubo una inconsistencia en el análisis de la estabilidad del alizarol, lo que provocó el rechazo de la recogida de leche. Los resultados del análisis del PPC indicaron no conformidad en 7 propiedades (23,3%), mientras que el SCC indicó no conformidad en 21 propiedades (70,0%), con un alto índice de infecciones mamarias entre los animales ordeñados en las propiedades.O leite cru refrigerado precisa ser obtido de maneira higiênica, seguindo protocolos rigorosos para que não haja a possibilidade de alterações em sua composição. A legislação brasileira estipula que o leite deve ser refrigerado na propriedade rural em até três horas após a ordenha, em temperatura igual ou inferior a 4ºC, sendo que o teste de estabilidade ao alizarol deve ser realizado pelo transportador antes da coleta do leite, obedecendo padrões físico-químicos e microbiológicos antes de seu descarregamento na indústria de laticínios. A análise de Contagem Padrão em Placas (CPP) do leite visa verificar a higiene da ordenha e das instalações da propriedade sendo o padrão é de 300x10³ UFC/mL o aceitável, já análise de Contagem de células somáticas (CCS) indica a presença de mastite no rebanho leiteiro. Este trabalho descreve os resultados da avaliação da rotina de coleta de leite em 30 propriedades rurais, para fins de comparação da temperatura indicada no painel do tanque de expansão e a temperatura aferida na hora (in loco), utilizando um termômetro tipo espeto. Também foi realizada a análise da estabilidade do alizarol 78% v/v, bem como foram coletadas 3 amostras de leite para a análise de CPP e CCS em laboratório externo credenciado. Os valores encontrados para a temperatura do resfriador de leite, em sua maioria (66,6%), corresponderam a temperatura correta do leite medida (in loco) por um termômetro aferido. Em apenas três propriedades houve inconformidade na análise da estabilidade ao alizarol, resultando na rejeição de coleta do leite.
