Resumo: The objective of this paper was to determine the morphological profile of rice flakes marketed and produced in Paraíba-PB, thus verifying if their grain size is within the quality parameters required by the legislation. Three different brands of rice flakes, collected from June to August 2019, were collected and evaluated for morphology. The marks were coded in order to preserve the manufacturers' identities, being identified in the present study by the numbering 1 to 3. Scanning electron micrographs were obtained on the Superscan microscope (SSX-550) under 10 kV acceleration with 2000x magnification. Differential particle size analysis was performed by sieving 50 g of rice flakes using a series of standardized sieves ranging from 9 to 100 mesh. The mathematical models adjusted to the experimental data were Gates-Gaudin-Schuhmann (GGS) and Rosin-Rammler-Bennet Model (RRB). The rice flakes have polyhedral or polygonal geometry, where all surfaces are multifaceted, smooth surface, without cracking or cavities, and it is possible to notice differences in particle size compared to manufacturers, which was confirmed by particle size analysis. Only one of the manufacturers had adequate particle diameter. Among the applied mathematical models, the Rosin-Rammler-Bennet (RRB) model was the best fit to the experimental data with determination coefficient (R2) higher than 0.98.

Se recogieron y evaluaron la morfología de tres marcas diferentes de copos de arroz, recolectadas de junio a agosto de 2019. Las marcas se codificaron para preservar las identidades de los fabricantes, identificándose en el presente estudio con la numeración 1 a 3. Se obtuvieron micrografías electrónicas de barrido en el microscopio Superscan (SSX-550) con una aceleración de 10 kV con un aumento de 2000x. El análisis diferencial del tamaño de partícula se realizó tamizando 50 g de hojuelas de arroz usando una serie de tamices estandarizados que varían de 9 a 100 mallas. Los modelos matemáticos ajustados a los datos experimentales fueron Gates-Gaudin-Schuhmann (GGS) y el Modelo Rosin-Rammler-Bennet (RRB). Las hojuelas de arroz tienen geometría poliédrica o poligonal, donde todas las superficies son multifacéticas, de superficie lisa, sin grietas ni cavidades, y es posible percibir diferencias en el tamaño de partícula en comparación con los fabricantes, lo que se confirmó mediante análisis de tamaño de partícula. Solo uno de los fabricantes tenía un diámetro de partícula adecuado. Entre los modelos matemáticos aplicados, el modelo Rosin-Rammler-Bennet (RRB) fue el que mejor se ajustó a los datos experimentales con un coeficiente de determinación (R2) superior a 0,98.O objetivo do presente artigo foi determinar o perfil morfológico dos flocos de arroz comercializados e produzidos na Paraíba-PB, verificando assim se a granulometria está dentro dos parâmetros de qualidade exigidos pela legislação. Foram coletadas e avaliadas quanto a morfologia 3 marcas diferentes de flocos de arroz, obtidas entre os meses de junho a agosto de 2019. As marcas foram codificadas a fim de preservar a identidade dos fabricantes, sendo identificadas no presente estudo pela numeração 1 a 3. As micrografias eletrônicas de varredura foram obtidas no microscópio Superscan (SSX-550) sob aceleração de 10 kV, com ampliação em 2000x. A análise granulométrica diferencial foi realizada através do peneiramento de 50 g de flocos de arroz, utilizado uma série de peneiras padronizadas na faixa de 9 a 100 Mesh. Os modelos matemáticos ajustados aos dados experimentais foram o de Gates-Gaudin-Schuhmann (GGS) e o de Modelo de Rosin-Rammler-Bennet (RRB). Os flocos de arroz possuem geometria poliédrica ou poligonal, onde todas as superfícies são multifacetadas, superfície lisa, sem rachadura ou cavidades, sendo possível perceber diferença no tamanho das partículas em relação aos fabricantes, no qual foi confirmado pela análise granulométrica.  Apenas um dos fabricantes apresentou diâmetro de partícula adequada.
