Social Incubator as a space for learning and promotion of local development: the case of the School Restaurant Eco Sol Bistro

Resumo: The School Restaurant Eco Sol Bistro is an extension project developed in the Incubatorof Social and Solidary Technologies of the Federal University of Grande Dourados(ITESS/UFGD), in partnership with the Nutrition Course, together with settlers ofAgrarian Reform and Quilombo, coming from entrepreneurship groups based on theprinciples of Solidary Economy, which lacked specific actions with respect to applied knowledge on gastronomy, meal production and food service management, withconsumer safety security and as a possibility to generate income. The project benefitsboth this audience and the academic community. Structured on the quality tripodhygienic-sanitary, sensory and nutritional), ambience and cost, it operates since October2014. With lunch service, it uses food from family farming, mostly organic food,ensuring five colors of fruits and vegetables a day, natural juice, homemade desserts anda typical dish. The joint teaching-research includes academic students from the Mastersin Agribusiness and Graduation in Nutrition. It is expected that at the end of two years,entrepreneurs are prepared to implement a similar service in their communities,providing income generation, social inclusion, dissemination of Solidary Economyprinciples and sustainable local development.

O projeto beneficia, tanto esse público, quanto a comunidade acadêmica.Estruturado no tripé qualidade (higênico-sanitária, sensorial e nutricional), ambiência ecusto, funciona desde outubro de 2014.Com serviço de almoço, utiliza alimentos daagricultura familiar, em sua maioria orgânicos, garantindo cinco cores de frutas ehortaliças ao dia, suco natural, sobremesas caseiras e um prato típico. No vínculoensino-pesquisa, se incluem acadêmicos de Mestrado em Agronegócios e de Graduaçãoem Nutrição.
