Food waste in households in the Federal District, Brazil: a perception of consumers

Resumo: | Abstract: This research aimed to understand the perception of consumers in the Federal District (DF), Brazil, about domestic food waste. This is an applied research, of exploratory and descriptive character, of quantitative approach (Survey), which used as instrument an online questionnaire, composed of statements separated by the variables "Purchase process", "Transport/Storage", "Handling/Preparation/Consumption of food", "Disposal" and "Intensity of disposal". The study sample consisted mainly of women, aged between 31 and 40 years and with complete post-graduation. As a result, the analysis of the Mean Item Score (MIS) allowed us to observe that the statements of the "Descarte" group were the ones that presented the most agreement, especially those that dealt with the environmental, social and economic impacts of waste, demonstrating consumer awareness, with financial loss being the most emphasized by them. Thus, among the actions taken to reduce or avoid waste, are the planning of purchases, use of leftovers and storage and consumption of food by expiration date. Therefore, it is concluded that consumers in the Federal District intend not to waste food, which is important to avoid domestic waste, although this problem is still complex. |

Se trata de una investigación aplicada, de carácter exploratorio y descriptivo, de enfoque cuantitativo (Encuesta), que utilizó como instrumento un cuestionario en línea, compuesto por declaraciones separadas por las variables “Proceso de compra”, “Transporte/Almacenamiento”, “Manipulación/Preparación/Consumo de alimentos”, “Eliminación” e “Intensidad de eliminación”. La muestra del estudio consistió principalmente en mujeres, con edades entre 31 y 40 años y con postgrado completo. Como resultado, el análisis del Mean Item Score (MIS) nos permitió observar que las declaraciones del grupo "Descarte" fueron las que presentaron más acuerdo, especialmente aquellas que trataron sobre los impactos ambientales, sociales y económicos de los residuos, demostrando la conciencia del consumidor, siendo la pérdida financiera la más enfatizada por ellos. Así, entre las acciones tomadas para reducir o evitar el desperdicio, se encuentran la planificación de las compras, el uso de las sobras y el almacenamiento y consumo de alimentos por fecha de vencimiento. Por lo tanto, se concluye que los consumidores en el Distrito Federal pretenden no desperdiciar alimentos, lo cual es importante para evitar los desechos domésticos, aunque este problema aún es complejo.Esta pesquisa objetivou compreender a percepção de consumidores do Distrito Federal (DF), Brasil, sobre o desperdício doméstico de alimentos. Trata-se de uma pesquisa aplicada, de caráter exploratório e descritivo, de abordagem quantitativa (Survey), que utilizou como instrumento um questionário online, composto por afirmações separadas pelas variáveis “Processo de compra”, “Transporte/Armazenamento”, “Manuseio/Preparo/Consumo de alimentos”, “Descarte” e “Intensidade de descarte”. A amostra do estudo foi constituída, principalmente, por mulheres, faixa-etária entre 31 e 40 anos e com pós-graduação completa. Como resultado, a análise do Mean Item Score (MIS) permitiu observar que as afirmações do grupo “Descarte” foram as que mais apresentaram concordância, principalmente as que tratavam sobre os impactos ambientais, sociais e econômicos do desperdício, demonstrando conscientização dos consumidores, sendo a perda financeira a mais enfatizada por eles. Assim, dentre as atitudes tomadas para diminuir ou evitar o desperdício, estão o planejamento das compras, uso de sobras e armazenamento e consumo de alimentos por data de validade. Portanto, conclui-se que os consumidores do DF intencionam não desperdiçar alimentos, importante para evitar o desperdício doméstico, embora esta problemática ainda seja complexa.
