Resumo: Professionals whose work is connected to health promotion, disease prevention and health recovery of older adults must know their nutritional process as a phenomenon which is influenced by environmental, social and psychological conditions. This study aims at carrying out a theoretical reflection on the nutritional education for older adults, as part of a health education process. We have discussed issues related to health education and nutritional education in general, besides nutritional education for older adults and their caregivers. Through nutritional education, health professionals can go beyond their technical-scientific knowledge in order to act as health educators and share knowledge with others. The implementation of educational strategies enables older adults and/or their caregivers to be regarded as autonomous subjects who are able to understand their nutritional needs and adapt them to their cultural patterns, preferences, food availability and financial conditions. As a result, they may promote changes in order to improve their health and quality of life.

As a result, they may promote changes in order to improve their health and quality of life.Los profesionales cuyo trabajo tiene relación con la promoción de la salud, prevención de enfermedades, o recuperación de la salud del anciano deben conocer el proceso nutricional de esta población como fenómeno fisiológico, influenciado por las condiciones ambientales, sociales y psicológicas. El objetivo de este trabajo fue realizar una reflexión teórica acerca de la educación nutricional para los ancianos, a través del proceso de la educación en salud. Discutimos las cuestiones relativas a la educación en salud, la educación nutricional, y la educación nutricional para la población anciana. A través de la educación nutricional, los profesionales de la salud son capaces de trascender sus conocimientos técnico-científicos para actuaren como educadores en salud y multiplicadores de los conocimientos. La implementación de estrategias educativas permite la aprehensión del anciano y/o de sus cuidadores como alguien independiente capaz de entender sus necesidades nutricionales y adaptarlas a sus patrones culturales, preferencias y disponibilidades alimentares y posibilidades financieras, promoviendo cambios en su proceso de vivir capaces de mejorar su salud y su calidad de vida.Os profissionais cujo trabalho tem relação com a promoção da Os profissionais cujo trabalho tem relação com a promoção da saúde, prevenção de doenças ou recuperação da saúde do idoso devem conhecer o processo nutricional dessa população como fenômeno influenciado por condições ambientais, sociais e psicológicas. O objetivo deste trabalho foi realizar uma reflexão teórica acerca da educação nutricional para idosos, através do processo de educação em saúde. Discutimos questões relacionadas à educação em saúde, educação nutricional e a educação nutricional para a população idosa e para seus cuidadores. Através da educação nutricional, os profissionais de saúde podem transcender seus conhecimentos técnico-científicos para atuarem como educadores em saúde e multiplicadores de conhecimentos.
