The Nature of Science and Technology in the treatment of Foodborne Diseases (FD) in the subjects of “Health and Adolescence” , “Chemistry Basics”and “Environment, Development and Society”

Resumo: A documentary analysis of the curricular designs (CD) is presented in relation to the teaching objectives of three subjects of the secondary school of the Province of Buenos Aires (Argentina), “Health and Adolescence” (H&A), “Chemistry Basics” (CB) and “Environment, Development and Society ”(ED&S). In the first place, a general analysis was carried out of each subject and then, of those contents that are related to Foodborne Diseases (FD). The contents of Nature of Science and Technology (NOS&T) that include these curricular designs were analyzed and, according to the taxonomy used, it was found that all learning objectives are associated with NOS&T, the contents of External Sociology of Science (ESS) in the topic Influence of Science and Technology on Society and several sub-themes: Social Responsibility, Social Decisions, Social Problems, Problem Solving, Contribution to Social Thought and Social Strengthening. In the particular case of CB, although ESS contents is also included, many of the objectives are related to the epistemological axis. All this is related to the central objectives of each subject on health care and the environment, which allows contextualizing the contents of science of different disciplines in an interdisciplinary way. Also, when analyzing the contents of NOS&T around the approach of the FD, it has been found that they are presented as a topic to work on the influence of Science and Technology on society and more specifically, the category of Resolution of social problems.

En primer lugar se realizó un análisis general de los objetivos de enseñanza de cada asignatura y, luego, de aquellos contenidos que se relacionan con las Enfermedades Transmitidas por Alimentos (ETA). Se analizaron los contenidos de Naturaleza de la Ciencia y la Tecnología (NdCyT) que incluyen estos diseños curriculares y, de acuerdo a la taxonomía utilizada, se encontró que todos los objetivos de aprendizajes se asocian a NdCyT, predominan los contenidos de Sociología Externa de la Ciencia (SEC) en el tema Influencia de Ciencia y Tecnología sobre la Sociedad y varios subtemas: Responsabilidad social, Decisiones sociales, Problemas sociales, Resolución de problemas, Contribución al Pensamiento social y Fortalecimiento social. Para el caso particular de FdQ, si bien tambien se incluyen contenidos de SEC, muchos de los objetivos se relacionan con el eje epistemológico. Todo esto se relaciona con los objetivos centrales de cada asignatura sobre el cuidado de la salud y el ambiente, lo que permite contextualizar los contenidos de la ciencia de diferentes disciplinas de forma interdisciplinaria. Asimismo, al realizar el análisis de los contenidos de NdCyT en torno al abordaje de las ETA, se ha encontrado que las mismas se presentan como un tema para trabajar la influencia de la Ciencia y la Tecnología sobre la sociedad y más específicamente, la categoría de resolución de problemas sociales.Uma análise documental três desenhos curriculares (DC) é apresentada em relação aos objetivos de ensino de duas disciplinas da escola secundária da província de Buenos Aires (Argentina), “Saúde e adolescência” (SeA), “Fundamentos de Química” (FdQ) e “Meio ambiente, desenvolvimento e Sociedade ”(MADeS). Em primeiro lugar, foi realizada uma análise geral de cada sujeito e, em seguida, dos conteúdos relacionados às Doenças Transmitidas por Alimentos (DTA). Os conteúdos da Natureza da Ciência e Tecnologia (NdCeT) que incluem esses desenhos curriculares foram analisados e, de acordo com a taxonomia utilizada, verificou-se que todos os objetivos de aprendizagem estão associados ao NdCeT, o conteúdo da Sociologia externa da ciência (SEC) no tópico Influência da ciência e tecnologia na sociedade e vários subtemas: Responsabilidade social, decisões sociais, problemas sociais, resolução de problemas, contribuição para o pensamento social e fortalecimento social. Para o caso particular do FdQ, embora o conteúdo da SEC também esteja incluído, muitos dos objetivos estão relacionados ao eixo epistemológico. Tudo isso está relacionado aos objetivos centrais de cada disciplina sobre saúde e meio ambiente, o que permite contextualizar o conteúdo da ciência de diferentes disciplinas de maneira interdisciplinar.
