Resumo: Improving the quality of life of vegetarians through nutrition education Summary: The vegetarian diet has beneficial effects on health, although there is a risk of nutritional deficiencies if it is not well planned. Therefore, this study aimed to promote health and quality of life, prevent nutritional deficiencies in vegetarians, and develop practical skills in students and health professionals. This is a cross-sectional study of adult vegetarians of both sexes. Anthropometric, sociodemographic, and lifestyle data were collected from 476 nutrition consultations performed on 239 vegetarians. Protocols were developed, and symposia and workshops were held. After a nutritional diagnosis, guidelines were developed for each individual. At the first visit, vitamin B12, ferritin, and hemoglobin deficiencies were present in 93%, 37%, and 11%, respectively. After the interventions, most had reduced the deficiency, demonstrating the importance of follow-up for vegetarian individuals.

Por ello, este estudio pretendía promover la salud y la calidad de vida, prevenir las deficiencias nutricionales en los vegetarianos y desarrollar habilidades prácticas en estudiantes y profesionales de la salud. Se trata de un estudio transversal de vegetarianos adultos de ambos sexos. Se recogieron datos antropométricos, sociodemográficos y de estilo de vida de 476 consultas de nutrición realizadas a 239 vegetarianos. Se elaboraron protocolos y se celebraron simposios y talleres. Tras un diagnóstico nutricional, se elaboraron directrices para cada individual. En la primera visita, las deficiencias de vitamina B12, ferritina y hemoglobina estaban presentes en el 93%, 37% y 11%, respectivamente. Tras las intervenciones, la mayoría había reducido la deficiencia, lo que demuestra la importancia del seguimiento de los individuos vegetarianos.A dieta vegetariana tem efeitos benéficos à saúde, embora haja risco de deficiências nutricionais caso não seja bem planejada. Diante disso, este trabalho teve por objetivo promover a saúde, a qualidade de vida e a prevenção da deficiência nutricional em vegetarianos e desenvolver habilidades práticas nos discentes e nos profissionais de saúde. Trata-se de um estudo transversal com vegetarianos, adultos, de ambos os sexos. Dados antropométricos, sociodemográficos e de estilo de vida foram coletados nos 476 atendimentos nutricionais realizados em 239 vegetarianos. Foram criados protocolos e realizados simpósios e oficinas. Após diagnóstico nutricional, elaboraram-se orientações para cada indivíduo. A deficiência de vitamina B12, ferritina e hemoglobina ocorreram em 93%, 37% e 11% dos indivíduos no 1º atendimento. Após as intervenções, a maioria reduziu a deficiência, demonstrando a importância do acompanhamento aos indivíduos vegetarianos.
