Cassava starch modified by oxidation: Physical and chemical properties and texture profile of the gels

Resumo: | Starch is an important compound in human food, as it is a great source of energy. However, native starch has limitations that make it difficult to use, so it can be modified to acquire stability, improve as rheological characteristics of the masses or texture of the gels, among others. The objective of this study was to evaluate the chemical composition of native (3 brands) or modified by oxidation (potassium permanganate, sodium hypochlorite or citric acid) cassava starch, as well as the texture profile and the physical and chemical properties of the gels obtained therefrom. Because of the lower amylose content and the intermediate texture parameters of the gels, a commercial native starch brand was considered more suitable for chemical modification. The starch modification by oxidation with citric acid or sodium hypochlorite resulted in gels with less firmness, gumminess and adhesiveness and higher clarity, cohesiveness, resilience and elasticity than native starches. In addition, the nutritional value of the starch was not altered by chemical modification. The utilization of potassium permanganate modified starch resulted in gels with physical, chemical and appropriate texture, but it had excessively dark coloration, which limits its use in processed foods. It is recommended the use of modified starches by oxidation in food toppings, salad dressings, mayonnaise, as binding agents in confectionery products or as emulsifiers. |

Sin embargo, el almidón nativo tiene limitaciones que dificultan su uso, por lo que se puede modificar para adquirir estabilidad, mejorar como características reológicas de las masas o textura de los geles, entre otras. El objetivo fue evaluar el efecto de la modificación química (oxidación) sobre la composición química de los almidones de yuca, así como sobre las propiedades físicas y químicas y el perfil de textura de los geles obtenidos a partir de ellos. Se realizó una investigación experimental con un enfoque cuantitativo de carácter aplicado y método deductivo hipotético, con objetivos explicativos y procedimientos experimentales. Se evaluaron tres marcas de almidones comerciales, una de las cuales se seleccionó para una modificación adicional. Se utilizaron modificaciones por permanganato de potasio, hipoclorito de sodio o ácido cítrico. Los almidones (nativos o modificados) se sometieron a análisis de composición química, mientras que los geles (3 y 5%) se evaluaron en cuanto al perfil de textura (firmeza, cohesión, resiliencia, adhesividad, gomosidad y elasticidad) y propiedades físicas y químicas de los geles obtenidos de ellos. Una marca comercial de almidón nativo se consideró más apropiada para la modificación química porque tiene menos contenido de amilosa y da como resultado geles con parámetros de textura intermedios. Se realizó un análisis exploratorio de los resultados. La modificación de los almidones por oxidación con ácido cítrico o hipoclorito de sodio dio como resultado geles con menos firmeza, pegajosidad y adhesividad y mayor claridad, cohesión, resiliencia y elasticidad que los almidones nativos. Además, el valor nutricional del almidón no se ha visto alterado por modificaciones químicas. El almidón modificado con permanganato de potasio dio lugar a geles con adecuadas características físicas, químicas y de textura, pero presentó coloración demasiado oscura, lo que limita su uso en alimentos procesados. Se recomienda utilizar almidones modificados por oxidación en recubrimientos alimentarios, aderezos para ensaladas, mayonesa, como aglutinantes en productos de confitería o como emulsionantes.O amido é um importante composto na alimentação humana, pois é uma fonte energética de grande relevância. Os amidos (nativos ou modificados) foram submetidos às análises de composição química, enquanto os géis (3 e 5%) foram avaliados quanto ao perfil de textura (firmeza, coesividade, resiliência, adesividade, gomosidade e elasticidade) e as propriedades físicas e químicas dos géis obtidos a partir deles. Uma marca de amido nativo comercial foi considerada mais apropriada para a modificação química por possuir menor conteúdo de amilose e resultar em géis com parâmetros de textura intermediários. Foi realizada uma análise exploratória dos resultados. A modificação de amidos por oxidação com ácido cítrico ou hipoclorito de sódio resultou em géis com menor firmeza, gomosidade e adesividade e maior claridade, coesividade, resiliência e elasticidade do que os amidos nativos. Além disso, o valor nutricional do amido não foi alterado pela modificação química. O amido modificado com permanganato de potássio originou géis com características físicas, químicas e de textura adequadas, mas apresentou coloração demasiadamente escura, o que limita a sua utilização em alimentos processados.
